Our milk is the most significant raw ingredient that contributes to the distinct flavor of cheese, yogurt, Kopanisti, Tyrovolia, ricotta, and rice pudding. We exclusively utilize fresh goat and sheep milk from Mykonos in all of our products.
Our unwavering philosophy is to utilize only fresh, local milk. In our Diary, we try to constantly supply uncompromised high quality goods by closely managing each step of milk production and processing, from optimum nutrition and animal health through final disposal of the product to the customer.
Our milk originates from carefully chosen herds of native small-breed cows that produce less but higher-quality milk and graze freely in certain locations of Mykonos and Rhenia. Breeders with whom we have decided to collaborate share our belief of the value of tradition and quality.
Our manufacturing is timed to coincide with the seasons of animal lactation, and this close relationship with nature adds to the outstanding flavor and freshness of our goods.
