List of traditional Naxos food recipes

1. Naxos Greek Salad

This salad is a perfect blend of fresh vegetables and flavorful feta cheese. It’s simple to make and can be enjoyed as a light meal or side dish.

2. Rosto with pork

1 pork loin
5-6 cloves garlic salt and freshly ground pepper
1/2 cup olive oil
2-3 ripe tomatoes, grated 2-3 tablespoons tomato paste
1 cup red thick wine

Preparation:

Make holes in the pork loin with a knife and fill them with tiny slices of garlic that have been dipped in salt beforehand. Season the meat with salt and pepper before brushing it with oil. Heat the olive oil in a saucepan over high heat and brown the meat on both sides. Add the wine, decrease the heat, and simmer for 4-5 minutes, turning the meat to absorb the wine, before adding boiling water to cover. Cover and boil until the tomatoes and tomato paste are soft. Always check to see if there are any liquids in the pot. Boil the pasta, then drain and add it to the sauce.

3. Pickled Peppers

1 Kg peppers (preferably red ones)
1 tbsp black peppercorns
1 teaspoon salt
1 cup olive oil
1 cup vinegar
2-3 laurel leaves
2-3 cloves garlic

Preparation:

Wash the peppers, remove the seeds, and grill for 20 minutes, or until the skin blisters. Allow cooling before peeling. In a saucepan, gently heat the vinegar, peppercorns, garlic, salt, and laurel leaves for 5 minutes. Allow the vinegar to cool before straining it. Pour the vinegar over the peppers into a jar. Cover the peppers with olive oil. Keep the jar in the fridge for at least 20 days.

4. Stuffed peppers with cheese

1 pepper per person (can be red for visual effect)
300 grams of genuine Feta cheese
1 strip of bacon per pepper
100ml Greek virgin olive oil
1 egg
½ teaspoon of black pepper
½ teaspoon smoked paprika

Preparation:

This is one of the most famous Naxos food recipes. Remove the stalk and seeds from the peppers and wash them. Do not discard the stem or its base (you will need it to seal the filling in the pepper). Make little squares out of the bacon. Crush the Feta cheese using a fork, then stir in the olive oil, egg, pepper, and smoked paprika.

Stuff each pepper and seal it with its stem before wrapping it in aluminum foil. Place on the grill, cover with coals or bake in a 220 °C preheated oven for 20 minutes.

5. Last of the traditional Naxos food recipes: Grilled aubergines

1 aubergine per person
2 cloves of garlic
Salt to taste
Pepper to taste
100ml Greek extra virgin olive oil
Preparation:

Wash the aubergines and cut them into 1 cm coins. Crush the garlic and combine it with the olive oil and salt, then completely mix it with a brush and apply it over both sides of each coin. Place the coins on a hot grill and flip until golden brown. When they are soft on the inside, they are ready. Drizzle a little raw olive oil over the stack and season to taste.

Although this dish is delicious as is, you may add and grill some sliced onions at the same time. Excellent pairing.

We hope that you will enjoy these recipes as much as we did!
